
Cranks Tomato and Lentil Soup
Straight from the recipe book of our Cranks Dartington restaurant
you will need
2 tins tomatoes (2 x 400g)
250g brown lentils (soaked)
2 ltr stock
1 medium potato chopped
2 medium onions chopped
2 lge carrots sliced
4 cloves garlic crushed
1 tsp ground cumin
1 tsp mild curry powder
1 tsp ground coriander
1/2 tsp ground ginger
2 tsp mxed herbs
2 tbsp vegetable oil
1 tbsp brown sugar
Dash of Tabasco
Garnish - chopped parsely and chives
how to make
Serves 6 to 8
1. Heat the oil in a roomy saucepan and fry the onions and garlic gently until soft
2. Add stock, carrots and potato
3. Cook until all the veg is soft
4. add the tinned tomatoes and all the spices, sugar and herbs
5. Bring to the boil and blend
6. Now add the lentils
7. Simmer gently until the lentils are very soft
8. Add a little more water if necessary
9. Check the seasoning and add a splash of Tabasco
10. Garnish with the chopped parsley and chives
