Millet & Peanut Cookies

A recipe devised specially for The Cranks Recipe Book; these cookies were later introduced into the restaurants and became a great favourite.

Method

Lightly whisk together the oil, salt, egg and sugar.

Stir in the remaining ingredients until well blended.

Roll the mixture into 10 balls, place on a lightly greased baking tray and flatten slightly.

Bake in the oven at 180'C (350'F / GM4) for about 15 minutes, until golden.

Allow to cool on a baking sheet for a few minutes before transferring to a wire tray.

ingredients

4 tbsp oil

1/4 tsp salt

1 free range egg

75g / 3 oz raw brown sugar

100g / 4 oz peanuts

75g / 3 oz raisins

100g / 4 oz millet flakes
