Very simple - but very very tasty!
Serves 5
Chop the vegetables
Heat the oil in a saucepan and saute the vegetables until the onion is transparent then add the remaining ingredients
Bring to the boil, reduce heat, cover and simmer for 20 minutes.
Blend in a liquidiser, and then thin with a little milk if desired
Adjust seasoning to taste and reheat to serving temperature
2 medium potatoes
1 medium onion
30ml / 2tbsp oil
600ml / 1pt vegetable stock
284ml / 1/2 pt milk
1tsp mixed herbs
1 tsp paprika
1/2 tsp caraway seeds
salt & pepper to taste
