A clever way to use stale bread to make a lovely pudding
Serves 6
Roughly break up the bread and place it in a mixing bowl with the milk
Leave to soak
Add the dried fruit, butter, sugar and mixed spice and beat well
Whisk together the egg and milk and add to the bread mixture
Turn into a greaseproof shallow ovenproof dish, level the surface and sprinkle with ground nutmeg
Bake in the oven at 180'C (350'F / GM4) for about 45 minutes, until set.
Serve hot or cold

225g / 8oz stale wholemeal bread
284ml / 1/2 pint milk
100g / 4oz mixed dried fruit
50g 2oz raw brown sugar
15ml / 1tbsp ground mixed spice
1 free range egg
60ml / 4tbsp milk
pinch of ground nutmeg
