One of the first recipes used in Cranks in the early days of Carnaby Street in the 1960's
Serves 6
Roll out the pastry and line a 23cm (9") flan tin
Bake 'blind' in the oven at 200'C (400'F / GM6) for 10 mins until lightly browned
Mix together the remaining ingredients and pour into the pastry case.
Return to the oven and bake for approx 40 mins or until the filling has set and is golden

Wholemeal shortcrust pastry made with 175g (6oz) flour
300g / 10oz Cheddar cheese, grated
2 lightly beaten free range eggs
350ml / 12 fl oz milk
25g / 1oz wholemeal breadcrumbs
25g / 1oz rolled oats
1/4 tsp dried sage
Salt & pepper to taste
large pinch Cayenne pepper
1 crushed garlic clove
1/2 tsp French mustard
5 spring onion, trimmed & sliced
2 tbsp parsley chopped
