Superbaco muffins

Superhealthy, sugarfree, fibre-rich, banana-coconut-raisin muffin

Method

Serves 6

Preheat oven to 350 degrees. In a medium size bowl mix first 7 ingredients. In a small bowl mix egg, yogurt, concentrate, banana and olive oil. Blend into dry ingredients. When blended add trailmix. Pour into medium size muffin pan. Bake for 18 minutes. Makes 6.

ingredients

1/3 cup ground oatmeal

2 tbs ground flax seeds

1/4 cup coconut

unsweetened 1/3 cup dinkel wheat

Dash sea salt

1 tsp baking soda

1 tsp baking powder

1 egg

1/3 cup yogurt

2 tbs apple juice concentrate

1 small very ripe banana

mashed 1 tbs olive oil (yes, olive oil!)

1/2 cup Dutch trailmix (is mixture of hazelnuts, coconut flakes, sultana raisins, brazil nuts and cashew nuts)
