Renee's Carrot & Zucchini Cake (sugar-free)

Carrot,zucchini and orange cake/loaf without sugar. I had to try out a recipe for a friend with diabetes so no sugar. Came up with this!

Method

Serves 4

Mix in a mixer the carrots, zucchini, sunflower seeds, grapes.

In a bowl mix the egg,  flour, leavening agent, orange zest and orange, salt, olive oil,

Mix all together

Line a bread loaf with oven paper.

Bake in a hot oven 185° for about 45 minutes or more, until slightly brown.

You can of course use wholemeal flour, but the white makes a lovely yellow loaf. I will add the photo of mine.

Slice when cool.

The loaf is quite soft and delicious on the side of a round goats cheese or just anytime.

3 medium carrots

1 medium zucchini (courgette)

a handful of sunflower seeds (or walnuts)

1 cup seedless grapes (or a ripe persimmon)

1 free range egg

1 cup organic self raising flour

2 tsp leavening agent

zest & juice of 1 orange

1 tspn pink Himalayan salt

2 tbsp virgin olive oil
