100% wholemeal flour 1 lb (450g)
Sea salt 1 tsp (5ml)
Fresh yeast ½ oz (15g)
Barbados sugar 1 tsp (5ml)
Water ½ - 2/3 pt (300 – 400 ml)
Mix flour with salt (in very cold weather warm the flour slightly, enough to take the chill off). Mix the yeast and sugar in a small bowl with ¼ pt (150 ml) of the warm water. Leave in a warm place for 10 minutes or so to froth up. Pour the yeasty liquid into the flour and gradually add the rest of the water. Mix well – by hand is best. Divide the dough into two 2 pt bread tins (round cake tins may be used if necessary ) which have first been greased and warmed. Put the tins in a warm place, cover with a cloth or oiled polythene, and leave for about 20 minutes to rise, or until the dough is within ½ “ of the top of the tins. Bake in the oven at 200 deg C (400 deg F/Mark 6) for about 35 – 40 minutes. Allow to cool for a few minutes and turn out on to a wire tray.
