Spicy Pepperpot

A rich red coloured, tomato based pasta sauce with diced peppers, onions and flecks of herbs. With pieces of tomato, roasted peppers and chilli heat.

Ingredients

A single 400gm can of chopped tomatoes. Cans are just as good as buying fresh tomatoes.
For sweetness, a level tablespoon (5gms) of granulated sugar and for spice, a pinch of paprika and cayenne pepper.
A single tablespoon of tomato puree.
1 small onion that needs chopping (weepers beware).
A couple of lovely garlic cloves that need crushing.
4 table spoons (30gms) of Olive oil.
1 red, yellow and green pepper, that all require a thorough deseeding and chopping. Extra pair of hands are useful here.
The compulsory salt and freshly ground black pepper for taste.

Method

Scatter all the peppers onto a baking tray, drizzle with 2 tablespoons of oil and then place into a preheated oven (200C, 400F, gas mark 4). Roast these until slightly charred around the edges and then carefully drain.
While the peppers are left to rest, add a single tablespoon of oil to a saucepan, and then heat the onion and garlic until soft.
Then introduce the tomatoes, tomato puree and roasted peppers. Once the sauce comes to the boil add the cayenne pepper, sugar and paprika to lift the flavours. Allow it to simmer for 5 minutes then season with salt and pepper to taste. Pour it over some freshly cooked pasta and finally, enjoy.
Note: wearing a white top during consumption is not advisable.
