Sweet Tomato and Italian Bean

A rich and sweet tomato based sauce with Italian Beans and a hint of chilli. A rich red colour with cannellini beans, onions and flecks of herbs

Ingredients

A 400g can of chopped tomatoes for the base of the sauce.
1 level (5gms) teaspoon of granulated sugar. Well it is called SWEET tomato and Italian bean sauce.
A pinch of paprika, and while you’re at it, a pinch of cayenne pepper.
A tablespoon (15gms) of tomato puree.
A small onion that’s been chopped, and 2 cloves of garlic that have been crushed to release the flavour.
Ideally, 4-5 fresh basil leaves that have been roughly torn, or 1 tablespoon of the dried stuff.
2 tablespoons (30gms) of Olive oil.
150g/5oz of delicious cannelloni beans that have been drained.
And of course, salt and freshly ground pepper to taste.

Method

To begin with, heat a tablespoon of olive oil in a saucepan and then stir in the onion and garlic until soft. At this point, bring in the tomatoes, tomato puree and the remaining oil, and then bring to the boil. Mix in the cannelini beans, cayenne pepper, paprika and sugar to give the flavours a boost.
Once the sauce has simmered for 5 minutes, add the basil and then season with salt and black pepper. Stir through freshly cooked pasta, enjoy, and then ignore the washing up until at least the day after.
