A rich red coloured, tomato based pasta sauce with flecks of herbs and ginger julienne. With pieces of tomato and julienne of ginger, with a distinct ginger warmth and background basil notes.
A single 400gm can of chopped tomatoes. You can of course chop your own tomatoes, but cans are pretty cheap nowadays and also save you the hassle.
1 level tablespoon (5gms) of granulated sugar, to add a little sweetness.
1 tablespoon of tomato puree.
1 small onion – which you’ll need to roughly chop (crying optional).
2 cloves of garlic, that have been lovingly crushed.
A couple of teaspoons of dried basil, or better still, 6-7 fresh basil leaves (roughly torn) for extra freshness.
Two tablespoons (or 30 gsms for those into numbers) of Olive oil.
A pinch of fresh ginger for its aroma and kick.
Salt and freshly ground black pepper to taste.
After heating a tablespoon of olive oil in a saucepan, gently fry your
onions and garlic until soft. Add your tomatoes, tomato puree and
remaining oil, then bring to the boil. At this stage introduce your
ginger and sugar to the mix and reduce the temperature to a gentle
simmer, for a further 5 minutes. Add the basil then season to taste.
Serve with freshly cooked pasta and then finally, administer a gentle pat on your back for a job well done.
