This is I suppose what led us to our current sandwich supplier, a very novel sandwich, a true vegetarian feast of innovation. No one else had such a sandwich on the market. It has since been copied by many, but never matched in our opinion.
The most popular Indian restaurant starter, turned into a sandwich, with traditional accompliaments of mint sauce, mango chutney, onion and coriander. The product also went on to win ‘Best Manufactured Sandwich of the Year 2005’ at ‘The Sammies’, the British Sandwich Industries version of the Oscars.
Two slices of malted bread, or if you can manage it (we never could, but did try) two spicy poppodoms instead, or some naan bread.
Low fat spread if you wish.
60g sliced onion bhaji, we have ours as you would expect made to our own special recipe, by a specialist producer, very close to one of our our manufacturing centres in Middlesbrough. If you can, make your own, if not Waitrose produce some of the best in our opinion.
15 g mint mayonnaise (5g real mint sauce mixed with 10g free range mayonnaise)
15g mango chutney, as you may have guessed, we have ours made specially to our own recipe in small batches, we did this so we could add whole spices and seeds, and keep some larger chunks of mango in it, as opposed to the smooth mango paste
that other people tend to use, as it is easier to spread. We prefer the difficult, chunky route.
Sliced red onion (core removed)
Diced cucumber – de seed if you can
Fresh coriander leaves – we love them, but add as few or as much as you wish.
Spread the mango over the lid, and the mint mayonnaise over the base. Cover the base with sliced bhaji, scatter over the onion, cucumber and coriander leaves. Crack open a cold Cobra Beer.
Feel free and experiment with other bhajis, such as mushroom, we did, but found the onion was the best. Maybe we will make a mushroom one as a limited edition in the future.
