Ingredients

Two slices of your favourite bread – we use a dark malted grain bread, but any of our range will taste great.
Butter or low fat spread ( or don’t use any and keep the fat down)

15g Mint Mayonnaise – we use a Free Range Egg Mayonnaise, that we mix with a mint sauce, that we have specially made for us, and unlike many others on the market, it’s main ingredient is mint. Feel free to make your own mayonnaise, if not we have a preference to a continental style mayo, like you dip your chips into in Belgium. You could also make your own mint sauce as well, but that may be taking things too far. We mix it one third mint to two thirds mayonnaise.

35g crumbled feta cheese – this is the traditional Greek Feta cheese that is now protected by the  EEC , protecting the traditional methods of production and the area that it can be made in. Traditionally, this is quite a salty cheese, which is why we have not put too much into the sandwich (believe it or not, we worry about your health and salt intake)

10g sliced Kalamatta Olives – these are a new addition and improvement to this sandwich, and add to it’s authenticity. In fact, all our olives are now kalamatta in all our sandwiches and salads.
20g Diced Chopped Peppers – green, red, yellow
Sliced cucumber and tomato
A handful of fresh rocket. – we had to add it so we could come up with the ingenious name, lettuce would be a suitable alternative.

Method

Butter the bread and spread the base with the mint mayonnaise, scatter over the crumbled feta cheese and the sliced olives. Cover with the mixed peppers and top with two slices of tomato and cucumber. Neatly arrange the rocket over the top.
