Handmade with free range eg g, mayonnaise, tomato chutney & spinach on malted brown bread
Two slices of your favourite bread – we use a dark malted grain bread, but any of our range will taste great.
Butter or low fat spread (or don’t use any and keep the fat down)
42g of free range egg mayonnaise (sorry to be so precise), we mix free range boiled eggs with seasoned mayonnaise and some good old English Mustard – Coleman’s of course.
1 free range egg – sliced – roughly 35g to be precise again. If you happen to have a good farmers market, try substituting with a hen or duck egg for a change.
20g of tomato chutney – we have our made, but something similar to Baxters or English provender will be fine, or of course, you could use the one you made last year.
10g fresh spinach leaves – eggs and spinach have a natural affinity
6g radicchio –adds a lovely colour and texture.
Butter the bread and spread the lid with the tomato chutney, and the base with the free range egg mayonnaise. Place the sliced egg over the egg mayonnaise, and try and keep the yolks down the cutting line (looks great when cut).
Cover with the spinach and the radicchio.
