Ingredients – below is a rough guide, as quantities are not so important, and are more important to us, to ensure quantity and fill levels, you can at home have as much as you like!
Cook some of your favourite pasta as per the cooking instructions, drain and allow to cool in some water in the fridge. We use a tri colour fusilli pasta as we like the shape and colours in the bowl, but most shapes will work well.
We then mix this once cooled with some slow roast tomatoes, finely chopped spinach (the posh term for this is ‘chiffonade’) and some chopped, pitted Greek kalamati olives.
Scatter over some sliced and crumbled authentic Greek Feta Cheese, and serve with the sundried tomato pesto salad dressing. Your favourite pesto, let down with some olive oil works just fine.
If you want to be really authentic, and be whisked away to a Greek beach, add a little dried or fresh oregano, and dream on. Serve with a cold ‘Ouzo’, before an afternoon nap in the sun.
